Sour Rye With Caraway Seeds
Description
This artisan sour rye bread is a hearty, flavorful loaf that combines the deep, earthy notes of rye flour with the sharp, citrusy bite of caraway seeds. The addition of vital wheat gluten ensures a satisfying chew and structure, preventing the dense crumb often associated with traditional rye. The dough develops a complex sour tang from the starter and yeast, making it an excellent choice for thick sandwiches, bagels, or simply with butter. It pairs beautifully with smoked meats, cheeses, or soups.Directions
-
In a small bowl, combine the dry yeast, 1/4 cup warm water, and a pinch of sugar.
-
Let the mixture stand for 5-10 minutes until it becomes frothy and active.
-
In a large mixing bowl, combine the yeast mixture, 1 cup tepid water, 2 cups starter, rye flour, vital wheat gluten, and caraway seeds.
-
Mix until a shaggy dough forms, then knead by hand or with a dough hook for 8-10 minutes until the dough is smooth and elastic.
-
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let rise in a warm place for 1-2 hours, or until doubled in size.
-
Punch down the dough and divide it into two equal portions.
-
Shape each portion into a round loaf and place them on a baking sheet lined with parchment paper or in greased loaf pans.
-
Cover the loaves and let them rise again for 45-60 minutes, or until nearly doubled.
-
Preheat the oven to 425°F (220°C). Place a roasting pan or baking dish filled with 2 inches of boiling water on the bottom rack of the oven to create steam.
-
Bake the loaves on the upper rack for 15 minutes.
-
Reduce the oven temperature to 350°F (175°C) and continue baking for another 30 minutes, or until the bread sounds hollow when tapped on the bottom.
-
Remove from the oven and let cool on a wire rack before slicing.
