Spiced Rice Pilaf
Description
This spiced rice pilaf is a fragrant and comforting side dish that elevates any meal with its warm, aromatic profile. Basmati rice is toasted with onions, garlic, and whole cloves before simmering in chicken broth until tender and fluffy. The dish is finished with a touch of sweetness from raisins and a crunch from toasted almonds and pine nuts, creating a delightful contrast in textures. It is an excellent accompaniment to curries, roasted meats, or grilled vegetables.Directions
-
Rinse the basmati rice under cold water until the water runs clear, then drain well.
-
In a medium saucepan with a tight-fitting lid, heat 1 tablespoon of vegetable oil over medium heat.
-
Add the chopped onion and minced garlic to the pan and sauté for 2 to 3 minutes until softened and translucent.
-
Add the whole cloves to the pan and cook for another minute until fragrant.
-
Stir in the rinsed rice and cook for 1-2 minutes, stirring constantly to coat the grains with oil and lightly toast them.
-
Pour in the chicken broth and add the salt. Stir gently to combine.
-
Bring the mixture to a boil, then immediately cover the pot, reduce the heat to low, and simmer for 20 to 25 minutes.
-
Remove from heat and let the pot stand covered for 5 minutes to allow the rice to steam and finish cooking.
-
While the rice simmers, heat the remaining 1 teaspoon of vegetable oil in a small skillet over medium heat.
-
Add the raisins, slivered almonds, and pine nuts to the skillet and toast for 1-2 minutes until the nuts are golden and fragrant.
-
Fluff the rice with a fork, fold in the toasted nut and raisin mixture, and serve immediately.
