Description

This sophisticated split pea soup transforms a humble winter staple into a bright, elegant dish. The earthy richness of slow-simmered peas is cut beautifully by the sharp, citrusy notes of fresh sorrel, creating a unique flavor profile that is both comforting and refreshing. Enriched with a touch of cream and pureed to a silky smooth consistency, this soup offers a luxurious texture that coats the palate. It is perfect for a cozy dinner party or a light yet satisfying lunch.

Directions

  1. In a large stock pot over low heat, melt the butter.
  2. Add the diced onions, carrots, celery, and minced garlic to the pot.
  3. Sauté the vegetables, stirring occasionally, until they become limp and tender, about 15 minutes. Be careful not to let them brown.
  4. Add the split peas, chicken stock (or water), ham hock, and the halved lemon to the pot.
  5. Bring the mixture to a boil, then reduce the heat to low.
  6. Cover and simmer gently for about 1 hour to 1 hour 30 minutes, or until the split peas are completely soft and breaking down.
  7. Remove the pot from heat. Discard the lemon halves and remove the ham hock.
  8. If using a ham hock, pull off any meat, chop it, and return it to the soup. Discard bones and skin.
  9. Stir in the fresh sorrel and whipping cream.
  10. Transfer the soup in batches to a food processor or blender and puree until completely smooth.
  11. For an extra-smooth texture, strain the pureed soup through a fine-mesh sieve back into the pot.
  12. Return the soup to low heat if necessary to warm through. Taste and adjust seasoning with salt and pepper as desired.
  13. Serve the soup piping hot or chill thoroughly to serve cold.
