  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, beat shortening and margarine (or butter) for about 30 seconds until softened.
  3. Add half of the flour, sugar, egg, 2 tablespoons milk, vanilla, baking soda, and salt.
  4. Beat until thoroughly combined, scraping down the sides of the bowl occasionally.
  5. Stir in the remaining flour until a dough forms.
  6. Divide the dough into three equal portions.
  7. Into the first portion, mix the melted chocolate and 2 teaspoons of milk. This will be the chocolate layer.
  8. Into the second portion, mix the chopped candied red cherries. This will be the cherry layer.
  9. Into the third portion, mix the chopped pistachio nuts, remaining milk, rum flavoring, and enough green food coloring to tint the dough a light green. This will be the pistachio layer.
  10. Line the bottom and sides of an 8 x 4 x 2 inch loaf pan with clear plastic wrap, leaving overhang on the sides for easy removal.
  11. Press the cherry dough evenly into the bottom of the prepared pan to form the first layer.
  12. Gently press the chocolate dough on top of the cherry layer to form the second layer.
  13. Gently press the green pistachio dough on top of the chocolate layer to form the third layer.
  14. Cover the pan with plastic wrap and chill in the refrigerator for at least 4 hours, or up to 24 hours, until firm.
  15. Remove the pan from the refrigerator. Invert the pan onto a work surface and carefully remove the loaf of dough.
  16. Peel off the plastic wrap from the dough.
  17. Using a sharp knife, cut the dough into 1/4-inch thick slices.
  18. Cut each slice crosswise into three smaller pieces to create individual cookies.
  19. Place the cookies 2 inches apart on ungreased cookie sheets.
  20. Bake in the preheated oven for 8 to 10 minutes, or until the edges are lightly browned.
  21. Remove from the oven and let cool on the pans for a few minutes, then transfer to wire racks to cool completely.
  22. Once cooled, drizzle with powdered sugar icing tinted green or with melted chocolate, if desired.
