Description

These Stuffed Franks transform a classic backyard staple into something special. By splitting the hot dogs and filling them with a mixture of cracker crumbs, celery, onion, and fresh parsley, you get a delightful contrast of textures. The creamy evaporated milk binds the stuffing together, while the butter adds richness. Grilling them in foil packets with a spoonful of ketchup steams the sausages gently, keeping them juicy and plump. This dish is perfect for summer cookouts, casual family dinners, or as a fun twist on traditional hot dogs. It's simple, satisfying, and sure to be a hit with kids and adults alike.

Ingredients

Directions

  1. In a medium bowl, combine the cracker crumbs, celery, evaporated milk, onion, pimiento, parsley, butter, and pepper. Mix lightly but thoroughly until well blended.
  2. Set the stuffing mixture aside.
  3. Place two frankfurters side-by-side on each of six 12-inch lengths of heavy-duty foil.
  4. Using a sharp knife, split each frankfurter lengthwise almost halfway through, creating a pocket for the stuffing.
  5. Stuff each frankfurter with approximately 1/4 cup of the crumb mixture, pressing it gently into the split.
  6. Spoon ketchup evenly over the stuffed frankfurters.
  7. Fold the foil over the frankfurters to create a securely wrapped, loose packet for each portion.
  8. If not grilling immediately, refrigerate the packets until ready to cook.
  9. Preheat grill to high heat with red-gray coals.
  10. Place the foil packets on the grill, about 6 inches from the coals.
  11. Grill for 15 minutes without turning the packets, allowing the heat to steam and cook the franks evenly.
  12. Carefully open the packets (watch for steam) and serve hot.

Note

You can prepare the stuffing and assemble the foil packets ahead of time. Keep them refrigerated until you are ready to grill.

Do not turn the packets while grilling. The foil protects the franks and allows them to steam in their own juices and the ketchup sauce, keeping them moist.

Use regular frankfurters rather than wieners for a more substantial bite that holds up better to the stuffing.

Leftovers should be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in the oven or microwave.
