Description

This vibrant dish features plump shrimp marinated in a bold blend of sugar, chili oil, lemon juice, garlic, and fresh herbs. The shrimp are skewered on fragrant sugar cane spears, which impart a subtle, natural sweetness as they cook. Served alongside golden-brown tofu cubes and shredded daikon, this recipe offers a perfect balance of sweet, savory, and spicy flavors. It is an impressive yet simple meal ideal for summer dinners, gatherings, or when you want to elevate seafood with unique presentation.

Directions

  1. In a small saucepan, combine sugar and water. Bring to a boil over medium heat, stirring until sugar dissolves. Remove from heat.
  2. In a large bowl, whisk together the sugar syrup, olive oil, chili oil, lemon juice, minced shallots, minced garlic, dill, parsley, tarragon, basil, salt, and ground red pepper.
  3. Add shrimp to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 1 hour, or up to 4 hours.
  4. Preheat broiler to high. Line a baking sheet with foil.
  5. Drain shrimp from marinade, reserving the liquid for later use as a dressing or glaze.
  6. Thread 3 shrimp onto each sugar cane spear.
  7. Cut tofu into 8 equal cubes. Place tofu cubes on the prepared baking sheet.
  8. Broil tofu for 3-4 minutes per side until golden brown on all sides.
  9. Arrange shrimp skewers on the baking sheet. Broil for 2-3 minutes per side until shrimp are opaque and cooked through.
  10. Plate 2 tofu cubes on each dish. Top with a shrimp skewer.
  11. Garnish with shredded daikon and chopped green onions. Drizzle with reserved marinade if desired.
