Description

This vibrant dish features tender, grilled turkey breast tenderloins brushed with a savory marinade, topped with a refreshing Mediterranean salsa. The salsa combines crisp cucumbers, juicy tomatoes, briny black olives, and creamy feta cheese, all tied together with fresh basil and a hint of sweetness. The result is a perfect balance of lean protein and bright, acidic flavors. Its an ideal meal for warm summer evenings, potlucks, or a healthy weeknight dinner. The contrasting textures of the juicy turkey and the crunchy salsa make every bite satisfying. Serve it as a light main course or slice the turkey for wraps and salads.

Ingredients

Directions

  1. Rinse the turkey breast tenderloins and pat them dry with paper towels.
  2. Place the turkey in a plastic bag set inside a shallow dish.
  3. In a small bowl, combine mayonnaise, 1/4 cup Italian dressing, and ground red pepper to make the marinade.
  4. Pour the marinade over the turkey in the bag, seal the bag, and turn to coat evenly.
  5. Marinate in the refrigerator for 6 to 24 hours, turning the bag occasionally.
  6. In a medium bowl, combine chopped tomatoes, cucumbers, black olives, onions, 2 tablespoons Italian dressing, fresh basil, sugar, and pepper to make the salsa.
  7. Cover the salsa and chill in the refrigerator for at least 30 minutes (or up to 24 hours) to allow flavors to meld.
  8. Preheat a gas grill to medium heat.
  9. Drain the turkey, reserving the marinade.
  10. Place the turkey on the grill and cover.
  11. Grill for 12 to 15 minutes (or 20 minutes on indirect heat), turning occasionally and brushing with reserved marinade, until the turkey is tender and cooked through.
  12. Just before serving, stir the crumbled feta cheese into the chilled salsa.
  13. Slice the turkey if desired, spoon the salsa over the top, and serve immediately.

Note

For food safety, discard any leftover marinade that has touched raw meat. If you wish to use it for basting, boil the reserved marinade for 2 minutes before brushing it on the turkey during the last few minutes of grilling.

The salsa can be prepared up to a day in advance, but add the feta cheese just before serving to prevent it from becoming soggy.

If you do not have a gas grill, you can cook the turkey in a grill pan on the stovetop or bake it in the oven at 400F (200C) for 20-25 minutes.
