  1. Preheat oven to 350&# 194;°F (175°C).
  2. In a medium bowl, combine ricotta (or cream cheese), crumbled feta, beaten eggs, flour, salt (if needed), nutmeg, and 3 tablespoons of the melted butter. Mix until smooth and well combined.
  3. Unroll the filo dough and cover it with a damp towel to prevent drying out. Cut the stack of sheets in half lengthwise so each piece is approximately 11 inches wide.
  4. Take one sheet of filo and brush it lightly with some of the remaining melted butter.
  5. Place 1 teaspoon of the cheese filling at one corner of the filo sheet, about 1 inch from the edge.
  6. Fold the corner over the filling to form a right angle triangle. Continue folding the sheet back and forth in a triangular accordion style until you reach the end of the sheet.
  7. Repeat with the remaining filo sheets and filling, brushing each sheet with butter as you go. Place the formed triangles on a baking sheet lined with parchment paper.
  8. Brush the tops of the triangles with the remaining melted butter.
  9. Bake for 20 to 25 minutes, or until the pastry is golden brown and crisp. Turn the baking sheet halfway through baking for even browning.
  10. Remove from oven and serve warm.
