Directions
-
Preheat oven to 350&# 194;°F (175ðC).
-
In a medium bowl, combine ricotta (or cream cheese), crumbled feta, beaten eggs, flour, salt (if needed), nutmeg, and 3 tablespoons of the melted butter. Mix until smooth and well combined.
-
Unroll the filo dough and cover it with a damp towel to prevent drying out. Cut the stack of sheets in half lengthwise so each piece is approximately 11 inches wide.
-
Take one sheet of filo and brush it lightly with some of the remaining melted butter.
-
Place 1 teaspoon of the cheese filling at one corner of the filo sheet, about 1 inch from the edge.
-
Fold the corner over the filling to form a right angle triangle. Continue folding the sheet back and forth in a triangular accordion style until you reach the end of the sheet.
-
Repeat with the remaining filo sheets and filling, brushing each sheet with butter as you go. Place the formed triangles on a baking sheet lined with parchment paper.
-
Brush the tops of the triangles with the remaining melted butter.
-
Bake for 20 to 25 minutes, or until the pastry is golden brown and crisp. Turn the baking sheet halfway through baking for even browning.
-
Remove from oven and serve warm.
