  1. In a mixing bowl, combine the ricotta (or cream cheese), crumbled feta, beaten eggs, flour, nutmeg, optional salt, and 3 tablespoons of melted butter until well blended.
  2. Cover the bowl with plastic wrap and refrigerate the filling for several hours or overnight. Remove from the refrigerator one hour before assembling to soften slightly.
  3. Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
  4. Unroll the filo dough and cut each sheet into thirds, creating strips approximately 3 x 11 inches. Keep the unused filo covered with waxed paper and a damp towel to prevent drying.
  5. Place one filo sheet on a clean work surface. Brush lightly with the remaining melted butter using a pastry brush.
  6. Place 1 teaspoon of the cheese filling in a line about 1 inch from the short end of the filo sheet nearest to you.
  7. Fold the bottom edge of the filo up over the filling so it meets the left edge, forming a right angle triangle.
  8. Continue folding the filo back and forth at right angles to create a triangular shape, brushing each layer with melted butter.
  9. Place the finished triangles on a baking sheet. Repeat with remaining filo and filling.
  10. Bake for 20 to 25 minutes, or until golden brown and crisp. Turn the tray once halfway through baking to ensure even browning.
