  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. In a large bowl, combine the ricotta (or cream cheese), crumbled feta, beaten eggs, flour, optional salt, nutmeg, and 3 tablespoons of melted butter. Mix until well blended.
  3. Cover the bowl with plastic wrap and refrigerate the filling for at least 1 hour, or up to overnight, until chilled and firm.
  4. Unroll the filo dough and cut the sheets in half crosswise to create smaller rectangles (approximately 9x11 inches or similar manageable size). Keep the unused sheets covered with a damp towel and waxed paper to prevent drying out.
  5. Place one sheet of filo on a clean work surface. Brush lightly with some of the remaining melted butter.
  6. Place 1 teaspoon of the cheese filling at the bottom right corner of the sheet, about 1 inch from the edge.
  7. Fold the bottom right corner over the filling diagonally to form a triangle. Continue folding the dough back and forth at right angles to create a long triangular strip.
  8. Brush the top of the folded pastry with remaining melted butter.
  9. Place the triangle on a baking sheet lined with parchment paper. Repeat with remaining dough and filling, arranging triangles on baking sheets.
  10. Bake for 20 to 25 minutes, turning the sheets halfway through baking, until the tyropites are golden brown and crisp.
  11. Remove from oven and let cool for a few minutes before serving warm.
