  1. Preheat oven to 350F (177C).
  2. Oil and flour an 8-inch springform pan, tapping out any excess flour.
  3. In a large bowl, beat 6 of the egg whites until stiff peaks form. Set aside.
  4. In a medium bowl, combine cocoa powder, sugar, vegetable oil, the remaining 2 egg whites, coffee, vanilla extract, and orange rind. Mix until smooth.
  5. Stir the ground almonds and flour into the cocoa mixture until well combined.
  6. Add one-third of the beaten egg whites to the cocoa mixture and gently mix with a rubber spatula.
  7. Gently fold in the remaining beaten egg whites until just combined, being careful not to deflate the batter.
  8. Pour the batter into the prepared springform pan.
  9. Bake for 25 minutes at 350F (177C). Be careful not to overbake.
  10. Remove from the oven and let the cake sit in the pan for 10 minutes before removing the ring.
  11. Allow the cake to cool completely on a wire rack.
  12. Place a doily or stencil on top of the cooled cake.
  13. Dust generously with confectioners' sugar, then carefully lift off the doily to reveal the lace pattern.
  14. Serve slices of cake with fresh berries on the side.
