  1. Preheat oven to 350F (175C).
  2. Remove skin from chicken breasts.
  3. Wash spinach, remove stems and discard, then tear leaves into small pieces.
  4. In a wok or large skillet, heat linseed oil over medium heat.
  5. Stir fry garlic and 2 teaspoons of the minced onion in the oil until fragrant.
  6. Add spinach, almonds, oregano, and salt to the pan.
  7. Saut for 2-3 minutes until spinach is wilted.
  8. Remove from heat and let the filling mixture cool slightly.
  9. In a 10x13 inch baking dish, combine uncooked brown rice and water or soup stock.
  10. Season the rice mixture with pepper, remaining minced onion, and chopped parsley.
  11. Place chicken breasts on a cutting board and pound lightly to flatten evenly.
  12. Divide the spinach mixture evenly among the chicken breasts, placing it in the center of each.
