Salt to taste Fresh ground pepper to taste Fresh mint sprigs Heat oil in a small saucepan. Add garlic and cumin seeds and cook very gently 2 minutes. Remove from heat and cool. In a bowl, combine cooled garlic mixture, yogurt, paprika and stir well. Add tomatoes, green onions, chopped mint, salt and pepper. Spoon mixture into a serving bowl and chill several hours. Garnish with mint sprigs. VARIATION: Omit tomatoes and onions and add 1 peeled seeded finely chopped or grated cucumber. NOTE: Serve as an accompaniment to curries or as a tasty sauce with hot buttered Nan or pita bread
