Description

This luxurious Chocolate Mascarpone Cream is the ultimate indulgent base for tiramisu, trifles, or individual dessert glasses. The recipe combines the creamy, mild tang of fresh mascarpone cheese with the deep, comforting notes of melted milk chocolate. Enriched with whipped egg whites for a light, airy texture and spiked with a hint of Kahlua and rum for complexity, it offers a sophisticated balance of richness and elegance. While it requires a bit of attention to temper the eggs and whip the whites, the result is a silky, stable cream that holds its shape beautifully. Ideal for holiday gatherings, romantic dinners, or any occasion calling for a touch of Italian sweetness, this cream brings professional bakery quality to your home kitchen. Serve chilled for the best flavor and texture.

Ingredients

Directions

  1. Beat the mascarpone cheese in a large bowl using an electric mixer with paddle attachments until it is smooth and fluffy, scraping down the sides of the bowl and under the beaters frequently.
  2. Meanwhile, place the milk chocolate in a medium heatproof bowl set over a pan of simmering water (bain-marie) and stir gently until completely melted.
  3. Remove the melted chocolate from the heat and set aside to cool slightly.
  4. In a separate large heatproof bowl, whisk together the egg yolks and 1/4 cup of granulated sugar.
  5. Place the bowl over simmering water and whisk continuously until the mixture is hot to the touch and the sugar has fully dissolved.
  6. Remove the egg yolk mixture from the heat and scrape it into the bowl with the whipped mascarpone.
  7. Beat on medium speed just until the egg yolks are fully combined with the cheese.
  8. Lower the mixer speed and gradually add the melted chocolate, mixing until the mixture is uniform and richly colored.
  9. In a clean, large bowl of the electric mixer fitted with a whip attachment, whip the egg whites until soft peaks form.
  10. Gradually add the remaining 1/4 cup of sugar to the egg whites and continue beating until they are shiny, firm, and hold stiff peaks, but are not dry or stiff.
  11. Gently fold the whipped egg whites into the mascarpone and chocolate mixture in three additions, using a spatula to maintain airiness.
  12. Stir in the Kahlua and rum until evenly distributed throughout the cream.
  13. Cover the bowl and refrigerate the cream until ready to use or until needed for assembly.
  14. For the soaking liquid, combine espresso coffee, water, sugar, Kahlua, and rum in a small pot.
  15. Bring the liquid to a boil, then remove from heat and allow it to cool completely.
  16. To assemble, place parfait or Pilsner glasses on a flat surface and cut cake circles to fit the bottom of the glasses.
  17. Ladle a small amount of the mascarpone cream into the bottom of each glass.
  18. Dip a cake circle into the cooled soaking liquid, squeezing out any excess liquid, and place it on top of the cream.
  19. Ladle more cream over the cake circle, then add another soaked cake circle, finishing with a final layer of cream.
  20. Repeat the layering process for all glasses.
  21. Refrigerate the assembled desserts for at least one hour, or until set and firm.
  22. Just before serving, decorate the tops with grated milk chocolate and a dusting of sifted unsweetened cocoa powder.
