Description

These Cinnamon Nut Crisps are a nostalgic, old-fashioned dessert that combines the soft, pillowy texture of yeast dough with the crunch of toasted almonds and the warmth of cinnamon. The dough is enriched with cream and eggs, then layered with butter, brown sugar, and spice before being rolled up and sliced. Each bite offers a delightful contrast between the tender interior and the sugary, nutty exterior. Perfect for holiday gatherings, weekend breakfasts, or as a comforting afternoon snack with a cup of coffee.

Ingredients

Directions

  1. Dissolve yeast in lukewarm water in a small bowl; let stand for 5 minutes until foamy.
  2. In a large bowl, combine eggs, lukewarm cream, 3 tablespoons sugar, salt, vanilla, and the yeast mixture.
  3. Gradually add sifted flour to the wet ingredients, mixing until a stiff dough forms.
  4. Turn dough onto a well-floured board and knead for 2 to 3 minutes until smooth and elastic.
  5. Place dough in a greased bowl, cover tightly, and let rise in a warm place for about 1 1/2 hours, or until doubled in bulk.
  6. Punch down dough and roll it out on a floured surface into a 26 x 20-inch rectangle, about 1/4 inch thick.
  7. Brush the entire surface with 2 tablespoons of melted butter.
  8. In a small bowl, combine 1 cup brown sugar and 1 teaspoon cinnamon. Sprinkle half of this mixture evenly over the dough.
  9. Fold the long sides of the dough toward the center, pressing down firmly. Fold the dough in half lengthwise to create four layers, pressing firmly to seal.
  10. Roll the dough out again into a 26 x 12-inch rectangle. Brush with the remaining 2 tablespoons of melted butter.
  11. Sprinkle the remaining brown sugar-cinnamon mixture over the dough, followed by the chopped almonds and raisins.
  12. Starting from the 26-inch edge, roll the dough up tightly like a jelly roll.
  13. Cut the roll into 1-inch slices.
  14. Dip one cut side of each slice into flour, then place floured-side up on a board sprinkled with extra sugar.
  15. Roll each slice flat to about 1/4-inch thickness.
  16. Place the rolls sugar-side up on well-greased baking sheets.
  17. Cover and let rise in a warm place for 15 minutes.
  18. Bake in a preheated 375°F (191°C) oven for 15 to 18 minutes, or until golden brown.
  19. Remove from oven and let cool slightly before serving.
