  1. Preheat the broiler.
  2. Rub chicken quarters with salt and place skin-side down in a broiler pan.
  3. Broil chicken for 15 minutes.
  4. While chicken cooks, cut one lime into wedges for garnish and refrigerate.
  5. Mince preserved ginger to measure 2 Tbsp.
  6. In a small saucepan, mix cornstarch, lime peel, lime juice, minced ginger, and 2 Tbsp of ginger syrup.
  7. Add butter to the saucepan and cook over medium heat, stirring constantly.
  8. Cook until butter melts, mixture boils, and thickens slightly; boil for 1 minute.
  9. Remove the saucepan from heat.
  10. After 15 minutes of broiling, brush chicken with some of the lime butter sauce.
  11. Broil chicken for 5 more minutes.
  12. Turn chicken over, skin-side up, and broil for 15 minutes.
  13. Meanwhile, prepare rice according to package directions.
  14. When rice is cooked, stir in drained and rinsed black beans and heat through.
  15. Cut off the leafy crown of the pineapple and reserve for garnish.
  16. Cut pineapple lengthwise into quarters, loosen fruit from rind, remove core, and cut into wedges.
  17. Cut papaya lengthwise in half, scoop out seeds, peel, and cut into 8 wedges.
  18. Arrange pineapple and papaya wedges in the broiling pan around the chicken.
  19. Brush chicken and fruit with remaining lime butter sauce.
  20. Broil for 5 more minutes, brushing occasionally, until chicken is fork-tender and fruit is heated through.
  21. To serve, arrange chicken and fruit on a platter.
  22. Spoon the rice and black bean mixture onto the platter alongside the chicken.
  23. Garnish with lime wedges and the reserved pineapple crown.
