  1. Combine chilies, ginger, cumin seeds & mustrad seeds in a small bowl.
  2. Heat ghee in a large pot.
  3. When hot, add the spices.
  4. When the mustard seeds start to pop, drop in the potatoes & cauliflower.
  5. Fry for 4 minutes or so.
  6. Add the tomatoes, turmeric, coriander, garam masala, sugar, salt & half the minced coriander.
  7. Mix well, cover & gently heat for 15 minutes.
  8. If the vegetables start to stick, add a few drops of water.
  9. Top with remaining coriander & serve.
