Directions
-
Cut 1 large onion into 2-inch cubes and finely chop 2 garlic cloves.
-
Peel 6 medium-large baking potatoes and cut them into 1-inch cubes.
-
In a large skillet, fry the salt pork over medium heat until nearly crisp.
-
Remove the cooked salt pork with a slotted spoon and set aside.
-
Drain all but 2 tablespoons of the fat from the skillet.
-
Reduce heat to low and add the chopped onion, garlic, and 1/4 teaspoon curry powder.
-
Sauté the onion mixture until soft and fragrant, about 12 minutes.
-
In a 5-quart pot, combine the potato cubes with 1 teaspoon salt, 1 teaspoon chopped tarragon, and enough water to cover the potatoes by 1 inch.
-
Bring the water to a boil and cook the potatoes for 15 minutes until tender.
-
Drain off the water from the potatoes completely.
-
Return the potatoes to the pot and add 3 cans (16 1/2 oz each) cream-style corn, 1 can (15 oz) evaporated milk, 1 quart fresh milk, the onion mixture, reserved salt pork, 1/2 teaspoon lemon pepper, 2 tablespoons butter, and 2 tablespoons sugar if desired.
-
Cover and simmer gently until the chowder has thickened, stirring occasionally, for 1 to 1 1/2 hours.
-
Add more milk if the chowder becomes too thick during simmering.
-
Cool the chowder and refrigerate, covered, overnight to allow flavors to meld.
-
Reheat the chowder gently until very warm and serve.
