Description

This Dave's Deluxe Corn Chowder is a rich and comforting soup that balances the sweetness of cream-style corn with the savory depth of salt pork. The subtle addition of curry powder and tarragon adds a unique aromatic twist to this classic American staple. Perfect for chilly evenings, this chowder features tender potatoes and a velvety milk-based broth that thickens beautifully over time. Ingredients

Directions

  1. Cut 1 large onion into 2-inch cubes and finely chop 2 garlic cloves.
  2. Peel 6 medium-large baking potatoes and cut them into 1-inch cubes.
  3. In a large skillet, fry the salt pork over medium heat until nearly crisp.
  4. Remove the cooked salt pork with a slotted spoon and set aside.
  5. Drain all but 2 tablespoons of the fat from the skillet.
  6. Reduce heat to low and add the chopped onion, garlic, and 1/4 teaspoon curry powder.
  7. Sauté the onion mixture until soft and fragrant, about 12 minutes.
  8. In a 5-quart pot, combine the potato cubes with 1 teaspoon salt, 1 teaspoon chopped tarragon, and enough water to cover the potatoes by 1 inch.
  9. Bring the water to a boil and cook the potatoes for 15 minutes until tender.
  10. Drain off the water from the potatoes completely.
  11. Return the potatoes to the pot and add 3 cans (16 1/2 oz each) cream-style corn, 1 can (15 oz) evaporated milk, 1 quart fresh milk, the onion mixture, reserved salt pork, 1/2 teaspoon lemon pepper, 2 tablespoons butter, and 2 tablespoons sugar if desired.
  12. Cover and simmer gently until the chowder has thickened, stirring occasionally, for 1 to 1 1/2 hours.
  13. Add more milk if the chowder becomes too thick during simmering.
  14. Cool the chowder and refrigerate, covered, overnight to allow flavors to meld.
  15. Reheat the chowder gently until very warm and serve.
