Directions
-
Hard boil 6 eggs, then peel them carefully and set aside.
-
In a bowl, mix the ground lean meat with chopped onion, garlic, ginger, turmeric, salt, pepper, 1/4 cup besan (chickpea flour), 1 tablespoon yogurt, and 1/2 teaspoon garam masala.
-
Knead the mixture well until it becomes sticky and holds together firmly.
-
Wet your hands slightly, take a portion of the meat mixture, flatten it into a disc, and wrap it around a hard-boiled egg, sealing the edges tightly to form a ball.
-
Repeat until all eggs are coated in the meat mixture.
-
Heat oil or ghee in a deep pan and carefully deep fry the koftas until they are golden brown and cooked through. Remove and drain on paper towels.
-
In the same pan, heat a little more ghee and fry 2 chopped onions until golden brown.
-
Add 8 chopped garlic cloves, 1 inch chopped ginger, and 2 chopped tomatoes (or tomato paste). Cook until the tomatoes break down and the mixture forms a thick paste.
-
Stir in 1/4 cup yogurt, 1/4 teaspoon turmeric, 1/2 teaspoon garam masala, salt, and pepper. Cook for another 2-3 minutes.
-
Add 1 1/2 cups water and bring the gravy to a simmer. Cook covered for 10 minutes to let flavors meld.
-
Gently place the fried koftas into the simmering gravy.
-
Cover and bake at 250ðF (120ðC) or simmer on low heat for 15-20 minutes to ensure the meat inside is fully cooked and flavors absorb.
-
Garnish with fresh coriander leaves and a sprinkle of garam masala before serving.
