Description

This elegant yet approachable dish features tender chicken cutlets that are lightly breaded and pan-fried to a golden crisp. The real star is the luxurious glaze: a rich reduction of honey, chicken broth, and toasted pecans, brightened with fresh orange peel and juice. The combination of sweet, savory, and nutty flavors makes it perfect for holiday dinners or special weekend gatherings. It's a sophisticated upgrade to standard chicken recipes that feels festive without requiring hours of cooking. Serve with the vibrant orange slices for a pop of color and a refreshing citrus counterpoint to the rich sauce.

Directions

  1. On a sheet of waxed paper or a paper plate, spread the bread crumbs.
  2. In a shallow dish, mix the flour, cornstarch, salt, and pepper. Sprinkle the chicken cutlets evenly with the flour mixture.
  3. Dip each floured cutlet into the beaten eggs, then coat thoroughly in the bread crumbs.
  4. In a 12-inch nonstick skillet, heat 2 tablespoons of the vegetable oil over medium-high heat.
  5. Add half of the chicken cutlets to the skillet. Cook, turning once, until lightly browned and cooked through, about 3 to 4 minutes per side.
  6. Transfer the cooked chicken to a serving platter and keep warm. Repeat the cooking process with the remaining oil and chicken cutlets.
  7. In the same skillet, add the pecan halves and sauté for 1 to 2 minutes until lightly toasted. Remove pecans from the skillet and set aside.
  8. In a bowl, combine the honey, chicken broth, grated orange peel, and lemon juice.
  9. Pour the honey mixture into the skillet with the toasted pecans. Stir constantly and bring to a boil.
  10. Reduce heat and simmer the sauce until it thickens, about 4 to 5 minutes.
  11. To serve, arrange the orange slices on the platter with the chicken. Top the chicken with the warm pecan mixture.
  12. Garnish with minced fresh parsley before serving.
