Description

This elegant yet effortless dish transforms simple white fish into a restaurant-quality meal in under twenty minutes. The steam-infused parchment packets lock in moisture, ensuring the fillets remain tender and flaky. Sun-dried tomatoes provide a rich, savory depth, while fresh thyme and garlic add aromatic brightness. It is the perfect solution for busy weeknights when you crave something sophisticated but low-effort. Serve with crusty bread to soak up the flavorful juices. While the tags suggest vegan, this recipe uses fish; for a plant-based option, substitute with thick-cut portobello mushrooms or hearts of palm.

Ingredients

Directions

  1. Preheat oven to 400&# 194;°F (200ðC).
  2. Cut four 12-inch circles from parchment paper (or use 12-inch squares of aluminum foil). Fold each circle in half to create a crease, then unfold.
  3. Place one fish fillet on one half of each parchment circle, next to the crease.
  4. Top each fillet with sun-dried tomato bits, lemon juice, thyme, minced garlic, salt, and pepper, dividing ingredients equally among the four portions.
  5. Fold the empty half of the parchment over the fish so the cut edges meet. Fold and roll the edges tightly to seal the packet securely, ensuring no steam can escape.
  6. Place the sealed packets on a baking sheet.
  7. Bake for 10 to 12 minutes, or until the packets are puffed and browned (if using foil, bake for 12 minutes).
  8. Transfer packets to plates. Carefully cut open the packets to release the steam and serve immediately.

Note

Use any thick-fleshed white fish such as halibut, sea bass, cod, or orange roughy. The fillets should be about 6 oz each and 3/4 inch thick for best results.

Aluminum foil can be used instead of parchment paper. If using foil, cut four 12-inch squares. The cooking time may need to be extended by a few minutes if using foil, as it conducts heat differently.

Be careful when opening the packets, as hot steam will escape.
