Directions
-
Place the shredded Napa cabbage in a large bowl and toss with 1/4 teaspoon salt. Let it sit for 10-15 minutes to release excess water.
-
Squeeze the cabbage firmly to remove as much liquid as possible, then return it to the bowl.
-
Add the chopped cilantro, ginger, garlic, scallions, and toasted sesame oil to the cabbage. Mix well to combine.
-
Place one wonton wrapper on a flat surface. Spoon about 1/2 ounce of the cabbage mixture into the center of the wrapper.
-
Moisten a finger with water and rub it along the edges of the wrapper to create a seal.
-
Fold the wrapper in half to form a triangle, pressing the edges firmly to seal out air.
-
Repeat the process with the remaining wrappers and filling.
-
Heat the vegetable oil in a frying pan over medium-high heat.
-
Place the potstickers in the hot oil in a single layer. Cook for 2 minutes per side, or until golden brown and crispy.
-
Remove from heat and serve immediately with ponzu sauce for dipping.

Note
If the cabbage mixture feels too wet after squeezing, you can add a little more sesame oil or garlic to balance the flavor and texture.
To prevent the wrappers from drying out while assembling, keep them covered with a damp cloth.
For a softer texture, you can steam the potstickers for 3 minutes before frying them in oil for crispiness.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet with a little oil to restore crispiness.
