Ingredients

Directions

  1. Soak the dried black Chinese mushrooms in hot water for 20 minutes until softened. Discard the stems and slice the caps. Reserve the soaking liquid.
  2. Soak the rice vermicelli in hot water according to package instructions until tender but still firm. Drain and set aside.
  3. Cut the dried tofu skin sticks into bite-sized pieces.
  4. Heat 1 tablespoon of oil in a wok or large skillet over medium-high heat. Add the tofu skin and fry until golden and crisp. Remove and set aside.
  5. In the same wok, add the remaining 2 tablespoons of oil. Stir-fry the minced garlic and shredded ginger for 30 seconds until fragrant.
  6. Add the sliced mushrooms and cabbage to the wok. Stir-fry for 2-3 minutes until the cabbage begins to wilt.
  7. Pour in the reserved mushroom soaking liquid. Bring to a simmer and let reduce slightly for 1 minute.
  8. Add the drained rice vermicelli and the fried tofu skin back into the wok. Toss everything together to combine and heat through for another minute.
  9. Season with salt and pepper to taste. Serve immediately.

Note

Save the mushroom soaking liquid for the sauce; it adds significant umami flavor. Strain it through a fine mesh sieve if you prefer a smoother texture.

For a richer flavor, you can add a splash of soy sauce or a teaspoon of sesame oil at the end of cooking.

This dish is best served fresh, but leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat gently in a pan with a splash of water to refresh the noodles.

Ensure the tofu skin is patted dry before frying to ensure it crisps up properly.
