Garlic & Chickpea Dip
Description
This rich and creamy dip transforms humble chickpeas into a sophisticated appetizer using whole roasted garlic bulbs for a deep, sweet pungency. The addition of tahini adds a velvety texture and nutty undertones, while fresh lemon juice cuts through the richness with bright acidity. Garnished with fresh parsley and served with crisp tomato slices, it offers a perfect balance of earthy, savory, and fresh flavors. Ideal for entertaining or as a healthy snack, this Mediterranean-inspired spread is naturally vegan and gluten-free. It holds its shape beautifully when chilled, making it an elegant centerpiece for any mezze table or casual gathering.Ingredients
Directions
-
Preheat oven to 400&# 194;°F (200ðC). Wrap the whole garlic bulbs in foil and roast for 40-45 minutes until soft and golden, or boil them whole until tender if preferred.
-
Allow the garlic to cool slightly, then squeeze the soft cloves out of their skins into a food processor.
-
Add the cooked chickpeas to the food processor with the garlic cloves.
-
Pulse the mixture until the chickpeas are finely broken down but not yet a smooth paste.
-
Add the olive oil, lemon juice, and tahini to the processor.
-
Blend on high until the mixture becomes completely smooth and creamy, scraping down the sides as needed.
-
Transfer the dip to a bowl and stir in the chopped fresh parsley and black pepper.
-
Lightly oil a serving mold or shallow dish. Press the dip firmly into the mold to create a smooth top.
-
Cover and refrigerate for at least 2 hours to allow the flavors to meld and the dip to set.
-
To serve, invert the mold onto a serving plate. Arrange fresh tomato slices or wedges around the border for garnish.

Note
For a smoother texture, you can remove the skins from the cooked chickpeas before blending, although this is optional.
If the dip is too thick, add a tablespoon of warm water to loosen it to your desired consistency.
This dip can be stored in an airtight container in the refrigerator for up to 4 days. It may firm up when cold; let it sit at room temperature for 10 minutes before serving.
For a variation, try adding a teaspoon of cumin or a pinch of paprika for extra warmth.
