Description

This rich and creamy dip transforms humble chickpeas into a sophisticated appetizer using whole roasted garlic bulbs for a deep, sweet pungency. The addition of tahini adds a velvety texture and nutty undertones, while fresh lemon juice cuts through the richness with bright acidity. Garnished with fresh parsley and served with crisp tomato slices, it offers a perfect balance of earthy, savory, and fresh flavors. Ideal for entertaining or as a healthy snack, this Mediterranean-inspired spread is naturally vegan and gluten-free. It holds its shape beautifully when chilled, making it an elegant centerpiece for any mezze table or casual gathering.

Ingredients

Directions

  1. Preheat oven to 400&# 194;°F (200ðC). Wrap the whole garlic bulbs in foil and roast for 40-45 minutes until soft and golden, or boil them whole until tender if preferred.
  2. Allow the garlic to cool slightly, then squeeze the soft cloves out of their skins into a food processor.
  3. Add the cooked chickpeas to the food processor with the garlic cloves.
  4. Pulse the mixture until the chickpeas are finely broken down but not yet a smooth paste.
  5. Add the olive oil, lemon juice, and tahini to the processor.
  6. Blend on high until the mixture becomes completely smooth and creamy, scraping down the sides as needed.
  7. Transfer the dip to a bowl and stir in the chopped fresh parsley and black pepper.
  8. Lightly oil a serving mold or shallow dish. Press the dip firmly into the mold to create a smooth top.
  9. Cover and refrigerate for at least 2 hours to allow the flavors to meld and the dip to set.
  10. To serve, invert the mold onto a serving plate. Arrange fresh tomato slices or wedges around the border for garnish.

Note

For a smoother texture, you can remove the skins from the cooked chickpeas before blending, although this is optional.

If the dip is too thick, add a tablespoon of warm water to loosen it to your desired consistency.

This dip can be stored in an airtight container in the refrigerator for up to 4 days. It may firm up when cold; let it sit at room temperature for 10 minutes before serving.

For a variation, try adding a teaspoon of cumin or a pinch of paprika for extra warmth.
