Ingredients

Directions

  1. Prepare the sauce by combining 1 tsp minced ginger, 1 tsp sesame oil, 1/2 tsp cornstarch, 1 cup water, 1 cup vinegar, and 1 cup soy sauce in a bowl. Set aside.
  2. Remove the skin from the chicken legs and cut the meat into 1-1/4 inch pieces, cutting through the bone if necessary.
  3. In a separate bowl, whisk together the egg, 1 cup of cornstarch, 1 cup of oil, salt, and pepper to create a thick marinade.
  4. Toss the chicken pieces in the marinade until fully coated. Let them marinate for 30 minutes.
  5. Heat the remaining 6 cups of oil in a deep pot or wok to 375ðF (190ðC).
  6. Carefully add the marinated chicken pieces to the hot oil in batches. Deep-fry for 5 minutes or until golden brown and cooked through. Drain on paper towels.
  7. In a clean wok, heat a small amount of oil over medium-high heat. Add the dried red peppers, chopped green onions, and minced garlic.
  8. Stir-fry the aromatics for 30 seconds until fragrant. Add the fried chicken pieces and pour in the prepared sauce.
  9. Toss everything together for 1 minute until the sauce thickens and coats the chicken evenly.
  10. Serve immediately while hot and crispy.
