General Tso’s Chicken (Real Thing)
Description
This authentic-style General Tso's Chicken features tender, deep-fried chicken pieces coated in a savory, sweet, and tangy sauce. The dish is balanced with the heat of dried chilies and the freshness of green onions. It is a satisfying main course perfect for family dinners or entertaining.Directions
-
Prepare the chicken by ensuring it is deboned and cut into chunks.
-
To make the sauce, mix the 1/2 cup cornstarch and 1/4 cup water together in a bowl.
-
Add the garlic, ginger, sugar, 1/4 cup soy sauce, white vinegar, and sherry to the cornstarch mixture.
-
Add the chicken stock and MSG (if using) and stir until the sugar dissolves.
-
Refrigerate the sauce until needed.
-
In a separate bowl, mix the chicken with the remaining 1/2 cup soy sauce and white pepper.
-
Stir in the egg to combine.
-
Add the 1 cup cornstarch to the chicken mixture and toss until the chicken is evenly coated.
-
Add a small amount of oil to help separate the chicken pieces.
-
Deep-fry the chicken in batches in oil heated to 350°F until crispy and light brown. Do not overcook, as the meat will toughen.
-
Drain the fried chicken on paper towels.
-
Place a small amount of oil in a wok and heat until just hot.
-
Add the green onions and dried hot peppers and stir-fry briefly. Be careful as the peppers may give off acrid smoke.
-
Stir the prepared sauce to recombine, then add it to the wok.
-
Add the fried chicken to the wok and cook just until the sauce thickens and coats the chicken.
-
Add water or a water/cornstarch slurry if the sauce is too thick.
