Description

These savory goat cheese and spinach turnovers are a delightful bite-sized treat, perfect for appetizers or light lunches. The combination of creamy goat cheese, fresh spinach, and crunchy toasted pine nuts creates a wonderful texture contrast, while the flaky phyllo pastry adds a golden, buttery crunch. Infused with aromatic garlic and rosemary, these turnovers offer a sophisticated flavor profile that is both comforting and elegant. They are easy to assemble and bake quickly, making them an ideal choice for entertaining guests or adding a gourmet touch to a casual meal.

Ingredients

Directions

  1. Preheat oven to 375F (190C). Line a baking sheet with parchment paper.
  2. Heat olive oil in a skillet over medium heat. Saut diced red onion and minced garlic until softened and fragrant, about 3-4 minutes.
  3. Add chopped fresh spinach to the skillet. Cook until wilted and excess moisture has evaporated, about 2-3 minutes. Remove from heat and let cool slightly.
  4. In a bowl, combine the goat cheese, parmesan cheese, toasted pine nuts, rosemary, and lemon peel. Fold in the cooled spinach mixture.
  5. Place phyllo sheets on a clean surface. Keep unused sheets covered with a damp towel to prevent drying. Brush each sheet lightly with melted butter.
  6. Cut each phyllo sheet into 3 equal rectangles. Place a small spoonful of the spinach-cheese filling onto one end of each rectangle.
  7. Fold the corners over the filling and roll tightly to form a turnover. Place seams side down on the prepared baking sheet.
  8. Brush the tops of the turnovers with remaining melted butter.
  9. Bake for 15-20 minutes, or until golden brown and crispy.
  10. Remove from oven and let cool for a few minutes before serving.

Note

Keep the phyllo dough covered with a damp kitchen towel while working to prevent it from drying out and cracking.

For a richer flavor, you can add a pinch of nutmeg or black pepper to the filling.

These turnovers are best served warm. They can be stored in an airtight container at room temperature for up to 2 days, or frozen for up to 1 month. Reheat in a 350F oven for 10 minutes to restore crispiness.

If using dried rosemary, ensure it is finely crumbled to avoid large, woody pieces in the filling.
