  1. Trim the ends off the green beans and cut them into 3-inch pieces. Wash thoroughly and drain well.
  2. Place the chopped onion and tomatoes into a heavy-bottomed pan or Dutch oven.
  3. Sprinkle the salt over the onions and tomatoes, then rub them lightly with your fingers to release juices.
  4. Add the green beans, olive oil, and sugar to the pan. Stir well to combine all ingredients.
  5. Cover the pan and cook over medium heat for 15 minutes, stirring occasionally, until the beans begin to soften and lose their bright green color.
  6. Once the initial moisture has been absorbed, stir-fry the mixture for 2 to 3 minutes to concentrate the flavors.
  7. Add 1/2 cup of water, cover the pan, and simmer for 40 to 50 minutes until the beans are tender.
  8. Check occasionally and add more water in 1/2 cup increments if the dish becomes too dry or starts to stick.
  9. Continue cooking until the beans are fully tender and the sauce is moist but not watery.
  10. Remove from heat and let cool slightly before serving.
