Ingredients

Directions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, combine the cottage cheese, shredded jack cheese, beaten eggs, chopped parsley, and salt. Mix until well blended and smooth.
  3. Lay out the phyllo pastry sheets on a clean surface, covering any unused sheets with a damp towel to prevent them from drying out.
  4. Cut each phyllo sheet in half horizontally.
  5. Brush one half-sheet lightly with melted unsalted butter.
  6. Fold the brushed sheet in half widthwise, then fold it in half again to create a narrow strip.
  7. Place about 1 tablespoon of the cheese mixture at one end of the strip.
  8. Fold the corner of the pastry over the filling to form a triangle.
  9. Brush the top of the triangle with more melted butter.
  10. Continue folding the pastry over itself in a flag-style motion, brushing each layer with butter, until you reach the end of the strip.
  11. Place the finished triangle on the prepared baking sheet, seam side down.
  12. Repeat the process with the remaining phyllo sheets and cheese filling.
  13. Bake the triangles for 15 to 20 minutes, or until they are golden brown and crisp.
  14. Allow to cool slightly before serving warm.
