Description

These Honey Almond Stars are a delightful treat that combines the nutty richness of ground almonds with the warmth of cinnamon, ginger, and coriander. The dough is sweetened with both honey and brown sugar, creating a deep, caramel-like flavor profile that shines through in every bite. After baking, the crisp cookies are brushed with a quick honey-lemon glaze, adding a glossy finish and a bright, tangy contrast to the spice-laden base. Perfect for holiday gatherings, tea time, or as a thoughtful homemade gift, these stars hold their shape beautifully while offering a tender, melt-in-your-mouth texture.

Directions

  1. Whisk together the flour, baking soda, salt, coriander, cinnamon, and ginger in a bowl; set aside.
  2. In a large saucepan, heat 1/2 cup of the honey along with the brown and granulated sugars over low heat, stirring constantly until the sugars are fully dissolved.
  3. Remove the honey mixture from heat and allow it to cool slightly.
  4. In a large mixing bowl, beat together the eggs and almond extract until well combined.
  5. Beat the cooled honey mixture into the egg mixture, then stir in the ground almonds.
  6. Gradually stir in the flour mixture until a soft dough forms.
  7. Wrap the dough tightly in plastic wrap and let it stand at room temperature for 4 hours.
  8. Preheat the oven to 350 degrees F (175 degrees C).
  9. Line two baking sheets with parchment paper.
  10. Divide the dough into quarters. Roll each quarter flat on a lightly floured surface to about 1/4 inch thickness.
  11. Use a star-shaped cookie cutter to cut out cookies and transfer them to the prepared baking sheets. Reroll scraps as needed.
  12. Immediately place the cookies in the oven and reduce the temperature to 325 degrees F (160 degrees C).
  13. Bake for 15 to 20 minutes, or until the cookies are firm and lightly golden.
  14. While the cookies bake, combine the remaining 1/4 cup honey, corn syrup, and lemon juice in a small saucepan. Heat over medium heat until it reaches a boil, about 3 minutes.
  15. Remove the cookies from the oven and immediately brush them with the warm honey glaze.
  16. Transfer the baking sheets to wire racks to cool completely.
