Description

These Individual Beef Wellingtons are a show-stopping dish perfect for date nights or special celebrations. Tender ribeye steaks are seared and wrapped in a savory mixture of minced mushrooms, onions, and fresh bread crumbs, then encased in flaky puff pastry. The result is a harmonious blend of textures: crispy golden exterior, earthy mushroom filling, and juicy, perfectly cooked beef. While traditional Wellington uses tenderloin, using ribeye adds a richer beef flavor. Serve with simple roasted vegetables to let the Wellington shine. This recipe simplifies the classic technique for a manageable yet impressive home-cooked meal that feels luxurious without the complexity of a restaurant kitchen.

Ingredients

Directions

  1. Separate stems from 8 mushrooms; reserve whole mushrooms and mince the remaining mushrooms and stems finely.
  2. In a large skillet over medium heat, melt butter and cook the minced mushrooms and onions for 5 minutes, or until all liquid has evaporated.
  3. Stir in bread crumbs, thyme, salt, and pepper into the mushroom mixture, then allow it to cool completely.
  4. Prepare the puff pastry according to package directions and cut into 8 rectangular pieces, setting aside scraps.
  5. Place about 1/3 cup of the cooled mushroom mixture in the center of each pastry rectangle.
  6. Top the mushroom mixture with one ribeye steak and one reserved whole mushroom cap.
  7. In a small bowl, beat egg whites with 2 teaspoons of water; brush the edges of the pastry rectangles with this mixture.
  8. Fold the pastry over the steak and mushroom, overlapping the edges and pressing firmly to seal.
  9. Roll out the pastry scraps and cut into leaf or decorative designs; brush the backs with egg white water and arrange on top of the pastry rectangles for decoration.
  10. Place the assembled Wellingtons on a cookie sheet and refrigerate for 2-3 hours to firm up the pastry.
  11. Remove from refrigerator and let the meat sit at room temperature for about 30 minutes before baking.
  12. Preheat oven to 400F (200C).
  13. In a cup, beat egg yolk with 2 teaspoons of water and brush generously over the top of the pastry.
  14. Bake for 23 minutes for rare or 25 minutes for medium doneness, until the pastry is golden brown.
