  1. In a large saucepan, heat olive oil over medium heat.
  2. Add the chopped onion and cook, stirring often, for 2-3 minutes until softened.
  3. Add the sliced mushrooms and cook, stirring often, for about 5 minutes until softened.
  4. Stir in the pearl barley and cook for 1 minute.
  5. Pour in the stock, 2 cups of water, bay leaves, and pepper.
  6. Bring the mixture to a boil, then reduce heat to medium-low.
  7. Cover and simmer for 1 hour.
  8. Add the diced potatoes and carrots, and season with salt to taste.
  9. Return to a boil, then reduce heat to medium-low again.
  10. Simmer for 30 minutes or until the vegetables are tender and the barley is cooked through.
  11. Remove and discard the bay leaves.
