Description

These homemade Japanese Gyoza offer a perfect balance of textures and flavors. The filling features earthy dried mushrooms rehydrated to concentrate their umami, paired with crisp cabbage and fresh aromatics. Pan-fried until golden and crispy on the bottom, then steamed to cook through, these pot stickers deliver a satisfying crunch followed by a tender, juicy bite. They are an excellent choice for a quick weeknight dinner, a festive appetizer, or a comforting snack. While traditionally made with meat, this vegan version relies on the savory depth of mushrooms and soy sauce for rich flavor. Serve them immediately with a dipping sauce of soy sauce, rice vinegar, and a touch of chili oil for the full experience.

Ingredients

Directions

  1. Rehydrate the dried mushrooms in warm water for 15 minutes until soft, then drain well and chop finely.
  2. Finely chop the cabbage and green onions.
  3. In a large bowl, combine the chopped mushrooms, cabbage, green onions, grated ginger, soy sauce, sesame oil, cooking wine, and black pepper. Mix thoroughly until evenly distributed.
  4. Place a small spoonful of the filling in the center of each gyoza wrapper.
  5. Dip your finger in water and wet the edges of the wrappers. Fold and pleat the wrappers to seal the dumplings tightly.
  6. Heat a non-stick skillet over medium-high heat and add a thin layer of salad oil.
  7. Arrange the gyoza in the skillet in a single layer, flat side down. Cook for 2-3 minutes until the bottoms are golden brown.
  8. Carefully add water to the skillet until it reaches about halfway up the sides of the dumplings. Cover immediately with a lid.
  9. Reduce heat to medium and steam for 5-7 minutes, or until the water has evaporated and the wrappers are cooked through.
  10. Remove the lid and cook for another minute to crisp the bottoms again if needed. Serve immediately.

Note

The original ingredient list mentioned "Ground beef" but the tags specify "Vegan". This recipe has been adjusted to use only the plant-based ingredients listed (mushrooms, cabbage, etc.). If you wish to include meat, you can substitute 1/2 lb of ground beef or pork into the filling mixture.

Ensure the mushrooms are drained very well after soaking; excess moisture can make the filling soggy and cause the wrappers to tear during cooking.

For easiest pleating, keep unused gyoza wrappers covered with a damp cloth to prevent them from drying out.

Gyoza are best served fresh and hot. They can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a pan with a little oil to restore crispiness.
