Ingredients

Directions

  1. Combine the dry yeast, sugar, and 1/2 cup of warm water in a small bowl.
  2. Let the mixture sit for 10 minutes until it becomes frothy and active.
  3. In a large mixing bowl, whisk together the white flour, wholemeal flour, salt, sesame seeds, sunflower seeds, and caraway seeds.
  4. Make a well in the center of the dry ingredients.
  5. Stir the honey, molasses, and 900 ml of very warm water into the frothy yeast mixture.
  6. Pour the wet mixture into the well and mix with a wooden spoon until a shaggy dough forms and ingredients are almost combined.
  7. Turn the dough out onto a lightly floured surface.
  8. Knead the dough for 5 minutes, adding extra flour as needed to prevent sticking, until smooth.
  9. Place the dough in a lightly greased bowl, turning to coat all sides.
  10. Cover the bowl with plastic wrap and wrap it in a towel.
  11. Let the dough rise in a warm place for 20 minutes, or until doubled in size.
  12. Turn the dough out onto a clean surface and knead gently for another 5 minutes to remove air bubbles and develop elasticity.
  13. Divide the dough into three equal portions.
  14. Shape each portion into a loaf.
  15. Place the loaves into three greased 20cm x 10cm loaf tins.
  16. Cover the tins loosely and let the loaves rise again until doubled in bulk, about 20 minutes.
  17. Preheat the oven to 200°C (392°F).
  18. Bake the loaves for 35-40 minutes, or until they sound hollow when tapped on the bottom.
  19. Remove the bread from the tins and transfer to a wire rack to cool completely before slicing.
