Preheat oven to 375°F (190°C).
-
Prepare lasagna noodles according to package directions; drain well and set aside.
-
In a large skillet over medium-high heat, cook the Italian sausage, ground beef, chopped onion, and minced garlic until the sausage is no longer pink and the onion is tender.
-
Stir in the tomatoes, tomato paste, sugar, 2 teaspoons of the salt, basil, fennel seeds, and pepper.
-
Bring the meat sauce to a boil over high heat, then reduce heat to low.
-
Simmer, uncovered, for about 20 minutes, stirring occasionally.
-
In a small bowl, blend together the ricotta cheese, beaten egg, parsley flakes, and the remaining 1/2 teaspoon of salt.
-
Spoon about 1 1/2 cups of the meat sauce into the bottom of a 13x9-inch baking dish.
-
Layer with 1/3 of the lasagna noodles, followed by 1/3 of the remaining meat sauce, 1/3 of the ricotta mixture, 1/3 of the olives, 1/3 of the mozzarella, and 1/3 of the Parmesan cheese.
-
Repeat the layers two more times, ending with cheese on top.
-
Cover the baking dish tightly with foil.
-
Bake for 25 minutes.
-
Remove the foil and bake for about 20 minutes more, or until the cheese is bubbly and the lasagna is heated through.
-
Let stand for 10 minutes before cutting and serving.
