Directions
-
Preheat oven to 350F (175C). Lightly grease a 9x13 inch baking dish.
-
In a medium bowl, combine the mashed sweet potatoes, brown sugar, ground cinnamon, ground nutmeg, and skimmed evaporated milk. Mix until smooth and well-blended. Set aside.
-
In a large skillet over medium heat, saut the minced onion in a little oil or butter until soft and translucent, about 3-4 minutes.
-
Add the cubed chicken to the skillet and cook until browned on all sides and no longer pink in the center, about 6-8 minutes.
-
Stir in the chicken broth, cream of chicken soup (or white sauce), and water. Simmer for 2-3 minutes until the sauce thickens slightly.
-
Fold in the drained water chestnuts into the chicken mixture.
-
Spread half of the sweet potato mixture into the bottom of the prepared baking dish.
-
Spoon the chicken and water chestnut mixture over the sweet potato layer.
-
Top with the remaining sweet potato mixture, smoothing the surface gently.
-
Bake uncovered for 20-25 minutes, or until the casserole is bubbly and the top is lightly golden.
-
Let stand for 5 minutes before serving to allow the layers to set.
