Ingredients

Directions

  1. Preheat oven to 350F (175C). Lightly grease a 9x13 inch baking dish.
  2. In a medium bowl, combine the mashed sweet potatoes, brown sugar, ground cinnamon, ground nutmeg, and skimmed evaporated milk. Mix until smooth and well-blended. Set aside.
  3. In a large skillet over medium heat, saut the minced onion in a little oil or butter until soft and translucent, about 3-4 minutes.
  4. Add the cubed chicken to the skillet and cook until browned on all sides and no longer pink in the center, about 6-8 minutes.
  5. Stir in the chicken broth, cream of chicken soup (or white sauce), and water. Simmer for 2-3 minutes until the sauce thickens slightly.
  6. Fold in the drained water chestnuts into the chicken mixture.
  7. Spread half of the sweet potato mixture into the bottom of the prepared baking dish.
  8. Spoon the chicken and water chestnut mixture over the sweet potato layer.
  9. Top with the remaining sweet potato mixture, smoothing the surface gently.
  10. Bake uncovered for 20-25 minutes, or until the casserole is bubbly and the top is lightly golden.
  11. Let stand for 5 minutes before serving to allow the layers to set.
