Loukoumathes
Description
Loukoumathes are a beloved Greek pastry consisting of small, pillow-like puffs that are deep-fried until golden and then soaked in a sweet honey syrup. While traditionally made with semolina, this version uses plain flour for a softer, cake-like texture that holds the syrup beautifully. The result is a delightful contrast between the crisp exterior and the moist, flavorful interior. Infused with warm spices like cinnamon, these treats are perfect for festive gatherings, coffee breaks, or as a sweet ending to a meal. They are simple to prepare but offer an authentic taste of the Mediterranean that is both comforting and indulgent.Ingredients
Directions
-
Dissolve the yeast in 2 tablespoons of the lukewarm milk and let sit for 5 minutes until foamy.
-
In a large bowl, combine the remaining milk, sugar, beaten egg, and melted butter.
-
Sift the flour and salt into a separate bowl and create a well in the center.
-
Pour the yeast mixture and milk mixture into the flour well, stirring gradually until a smooth batter forms.
-
Beat the batter vigorously for 1 minute to ensure it is lump-free.
-
Cover the bowl with a damp cloth and let the batter rise in a warm place for 1-1.5 hours, or until it doubles in bulk and bubbles form on the surface.
-
Stir the risen batter well to deflate it.
-
Heat oil in a deep pot to 190C (375F).
-
Drop teaspoonfuls of the batter into the hot oil, frying 4 to 5 pieces at a time.
-
Turn the puffs occasionally to brown them evenly, cooking for about 1 minute per side.
-
Remove the puffs with a slotted spoon and drain on absorbent paper.
-
Pile the hot puffs onto a serving plate.
-
Drizzle each layer generously with warm honey.
-
Sprinkle with ground cinnamon between layers and on top.
-
Serve immediately while hot.
