  2. Remove the sausage meat from the casings.
  3. Stuff the chicken cavity with the rosemary sprig, sage leaves, and sausage meat.
  4. Season the outside of the chicken generously with salt and freshly ground black pepper.
  5. Wrap the chicken breast tightly with thin slices of pancetta.
  6. Place the seasoned chicken on a large sheet of parchment paper.
  7. Wrap the chicken securely in the parchment paper, ensuring there are no holes and the bird is fully enclosed.
  8. Preheat the oven to 425 degrees Fahrenheit (218&# 194;°C).
  9. Roll out the non-toxic pottery clay between two sheets of plastic wrap into a large circle big enough to cover the chicken.
