Description

These Maple Wafers are a classic American treat, offering a delicate crispness and intense maple flavor. The batter is thin and fluid, spreading into lacy, golden-rimmed discs that snap when broken. Made with simple ingredients like pure maple syrup, butter, flour, and a single egg, they are surprisingly easy to prepare despite their elegant appearance. They pair perfectly with coffee or tea, making them ideal for holiday gatherings, afternoon snacks, or as a sophisticated addition to a dessert plate. Ingredients

Directions

  1. In a medium saucepan over medium-high heat, bring the maple syrup to a boil.
  2. Boil for 3 1/2 minutes, or until the syrup is reduced to about 1/2 cup.
  3. Add the butter to the reduced syrup and let the mixture return to a boil for 2 minutes.
  4. Remove the saucepan from heat and let the mixture cool slightly.
  5. In a medium bowl, sift together the flour, sugar, baking soda, and salt; set aside.
  6. In another bowl, beat together the egg and vanilla extract until combined.
  7. Stir the cooled maple-butter mixture into the egg mixture.
  8. Add the dry ingredients to the wet mixture and stir until well blended; the batter will be fluid.
  9. Preheat the oven to 375F (190C).
  10. Grease baking sheets thoroughly.
  11. Drop batter by small rounded teaspoonfuls onto the prepared baking sheets, spacing them about 3 1/2 inches apart to allow for spreading.
  12. Bake for 5 to 6 minutes, or until the wafers are gold-rimmed with a 1/2 inch of light brown center.
  13. Watch carefully to avoid burning.
  14. Remove from oven and let stand for 1 minute.
  15. Using a spatula, quickly transfer wafers to wire racks before they become brittle.
  16. If wafers firm up before removal, return them to the oven for 1 to 2 minutes to soften slightly.
  17. Allow wafers to cool completely on the racks.
  18. Cool baking sheets completely before reusing and grease thoroughly between batches.
