Ingredients

Directions

  1. Rinse the navy or Great Northern beans thoroughly and place them in a large pot. Cover with water and bring to a boil; reduce heat and simmer for 10 minutes, then drain and rinse again.
  2. Return the drained beans to the pot and add 2 quarts of fresh water, the onion stuck with cloves, the bay leaf, and 1 teaspoon of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 30-40 minutes until the beans are tender.
  3. While the beans cook, peel and chop the pumpkin or winter squash into 1-inch cubes. Mince the garlic cloves and slice the leeks.
  4. Once the beans are tender, discard the onion and bay leaf. Add the chopped pumpkin to the pot and continue simmering for 15-20 minutes until the squash is soft.
  5. In a separate skillet, heat the olive oil over medium heat. Saut the leeks and garlic for 3-4 minutes until softened and fragrant. Stir in the slivered sage leaves and cook for another minute.
  6. Add the sauted vegetable mixture to the soup pot. Season with the remaining salt and pepper to taste.
  7. Using an immersion blender, partially blend the soup until creamy but still containing some texture, or transfer half the soup to a blender, puree, and return to the pot.
  8. Simmer for an additional 5 minutes to meld flavors. Serve hot.
