Directions
-
Rinse the navy or Great Northern beans thoroughly and place them in a large pot. Cover with water and bring to a boil; reduce heat and simmer for 10 minutes, then drain and rinse again.
-
Return the drained beans to the pot and add 2 quarts of fresh water, the onion stuck with cloves, the bay leaf, and 1 teaspoon of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 30-40 minutes until the beans are tender.
-
While the beans cook, peel and chop the pumpkin or winter squash into 1-inch cubes. Mince the garlic cloves and slice the leeks.
-
Once the beans are tender, discard the onion and bay leaf. Add the chopped pumpkin to the pot and continue simmering for 15-20 minutes until the squash is soft.
-
In a separate skillet, heat the olive oil over medium heat. Saut the leeks and garlic for 3-4 minutes until softened and fragrant. Stir in the slivered sage leaves and cook for another minute.
-
Add the sauted vegetable mixture to the soup pot. Season with the remaining salt and pepper to taste.
-
Using an immersion blender, partially blend the soup until creamy but still containing some texture, or transfer half the soup to a blender, puree, and return to the pot.
-
Simmer for an additional 5 minutes to meld flavors. Serve hot.
