Millet Loaf
Description
This Millet Loaf is a comforting and nutritious plant-based main that transforms humble grains into a satisfying meal. The fluffy cooked millet binds perfectly with finely diced celery, onions, and carrots, creating a moist interior with a savory depth from garlic, dill, and thyme. Toasted pistachios add a delightful crunch and earthy richness, while sesame oil provides a subtle aromatic note. Ideal for vegan dinners, potlucks, or as a sturdy base for sandwich slices, this loaf holds together well and reheats beautifully. Its a versatile dish that brings a rustic, home-cooked feel to your table, proving that grain-based loaves can be just as indulgent as their meat-based counterparts.Ingredients
Directions
-
Preheat your oven to 400F (200C). Lightly grease a standard 9x5-inch loaf pan with oil or line it with parchment paper.
-
Rinse the millet thoroughly under cold water. In a medium saucepan, combine the millet, water, and 1/2 teaspoon of the sea salt.
-
Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 30 minutes or until the water is absorbed and the millet is tender. If excess moisture remains, drain it. Let the millet cool slightly.
-
While the millet cooks, heat the sesame oil in a skillet over medium heat. Add the diced onions, carrots, and celery. Saut for 6-8 minutes until the vegetables are softened and translucent.
-
Add the minced garlic to the skillet and cook for 1 more minute until fragrant. Remove from heat.
-
In a large mixing bowl, combine the cooked millet, the sauted vegetable mixture, dill, thyme, and the remaining 1 1/2 teaspoons of sea salt.
-
If using pistachios, chop them roughly and fold them into the millet mixture.
-
Press the mixture firmly and evenly into the prepared loaf pan to ensure it holds together.
-
Bake in the preheated oven for 45-50 minutes, or until the loaf is set and lightly golden on top.
-
Allow the loaf to cool in the pan for 10 minutes before carefully inverting it onto a wire rack to cool completely. Slice and serve.
