Directions

  1. In a large saucepan, combine 1 1/2 cups water, sugar, shortening, and salt.
  2. Heat the mixture over medium heat until hot and the sugar and salt are dissolved.
  3. Remove from heat and stir in 1 cup cold water to cool the mixture to lukewarm.
  4. In a large mixing bowl, combine 4 cups of the flour and the yeast.
  5. Pour the warm liquid mixture into the flour and yeast.
  6. Beat the mixture for 2 minutes until smooth and combined.
  7. Gradually add the remaining 2 1/2 to 3 cups of flour, mixing until the dough is stiff and holds together.
  8. Turn the dough out onto a floured surface and knead for 3 minutes, or until smooth and elastic.
  9. Place the dough in a greased bowl, cover, and let rise in a warm place for 1 to 1 1/2 hours, or until doubled in size.
  10. Punch down the dough and divide it into two equal portions.

Note

You may substitute 1 cup of oat bran for 1 cup of the flour for a heartier texture.

Whole wheat flour or other whole grain flours can also be substituted for up to 1 cup of the all-purpose flour for added nutrition.

Ensure the liquid mixture is lukewarm, not hot, before adding the yeast to avoid killing the yeast.
