Ingredients

Directions

  1. Heat the butter in a pressure cooker or large pot over medium heat.
  2. Add the chopped onion and sauté until soft and translucent, about 2 to 3 minutes.
  3. Stir in the celery, carrot, and diced potatoes; sauté for an additional minute to coat in butter.
  4. Add the fish chunks, fish stock, water, bay leaf, and dried thyme to the pot.
  5. If using a pressure cooker, lock the lid and bring to high pressure.
  6. Cook under high pressure for 4 minutes.
  7. If using a stovetop pot, cover and simmer gently until potatoes are tender, about 10-12 minutes.
  8. If using a pressure cooker, perform a quick release by running cold water over the lid or using the quick-release valve.
  9. Carefully remove the lid and discard the bay leaf.
  10. Stir in the heavy cream, corn kernels, chopped parsley, salt, and pepper.
  11. Simmer the chowder on low heat for 2-3 minutes until the corn is cooked and the soup is heated through. Do not boil vigorously to prevent curdling.
  12. Ladle into serving bowls and top with a pat of butter and bacon bits if desired.
