This old-fashioned peach pie captures the essence of summer in every bite. Juicy, ripe peach slices are tossed with sugar, a touch of flour for thickening, and warm spices like nutmeg or cinnamon to create a luscious filling. The fruit is nestled into a flaky, buttery pastry shell and topped with a beautiful lattice crust that allows the aromatic steam to escape while baking. As it bakes, the juices bubble up, creating a golden, caramelized edge. Serve it warm with a dollop of whipped cream or a scoop of vanilla ice cream for a comforting, nostalgic dessert. It’s perfect for family gatherings, potlucks, or simply enjoying a slice on the porch after dinner.

Directions
-
Preheat the oven to 400ðF (200ðC).
-
Prepare a plain pie pastry and line a 9-inch pie plate with the bottom crust.
-
In a large bowl, combine the sugar, flour, and nutmeg or cinnamon.
-
Add the sliced peaches to the dry ingredients and toss gently to coat evenly.
-
Pour the peach mixture into the pastry-lined pie plate.
-
Dot the top of the filling with small pieces of butter or margarine.
-
Cut the remaining dough into strips, 1/2 to 3/4 inch wide, for the lattice top.
-
Lay half of the strips lengthwise across the pie at 1-inch intervals.
-
Fold back every other strip, then lay crosswise strips over the remaining dough, placing them on the diagonal.
-
Unfold the reserved strips over the crosswise strips to complete the weave.
-
Trim the bottom crust and lattice strips even with the outer rim of the pie plate.
-
Seal the edges by pressing them together, then crimp with a fork or fingers.
-
Dampen the edge lightly with water and place an extra strip of dough over it to cover the ends of the lattice, sealing and crimping again.
-
Bake in the preheated oven for 40 to 45 minutes, or until the crust is golden brown and the filling is bubbling.
-
Allow to cool slightly before serving warm with whipped cream or ice cream.
