  1. Peel and slice the peaches until you have 10 cups of fruit.
  2. Place the sliced peaches in a large saucepan.
  3. Add the sugar and bring the mixture to a boil, stirring constantly until the sugar is completely dissolved.
  4. Working in batches, transfer the hot peach mixture to a blender or food processor and puree until smooth.
  5. Allow the puree to cool until it is lukewarm.
  6. Line baking sheets or jelly-roll pans with plastic wrap or parchment paper.
  7. Pour the peach puree onto the lined sheets and spread it into a thin, even layer approximately 1/8 inch thick.
  8. Preheat your oven to 150&# 194;°F (65°C).
  9. Place the sheets in the oven and prop the door open slightly to allow moisture to escape.
  10. Dehydrate for 20 to 24 hours, rotating the sheets halfway through, until the leather is dry and peels easily from the surface.
  11. Once dry, remove from the oven and let cool completely.
  12. Peel the fruit leather off the plastic wrap or parchment paper.
  13. Cut into strips or roll up for serving.
